
Alava Gastronomy
In Alava, the attention to good cuisine does
not lag behind. Renowned are the revuelto de perretxikos (a local
wild mushroom omelette) and caracoles (snails) that are collected
in spring with the first rains. In addition, worth mentioning
are habas a la vitoriana (lima beans with ham) as well as various
meat, fish, and vegetable dishes that will delight the most discriminating
palate.
Nevertheless, we cannot speak of Alava without mentioning the
wine from its Rioja region, which according to wine connoisseurs
has superior characteristics to other rioja wines. The wines from
the Rioja region in Alava are among the most renowned, and their
reputation surpasses our frontiers.
