Cochinillo de Arevalo

The town of Arévalo, in the district of la Moraña, and its surrounding villages, is one of the main centres which maintains the gastronomic tradition of cooking "cochinillo" (suckling pig), or "tostón", as it is known in other parts of Castilla y León.

The suckling pig is from a white breed, reared exclusively on its mother's milk until the day it is killed, usually when it has reached between 4.5 and 6.5 kg in weight. This meat is distinguished by its tenderness, a result of the pig's milk diet, and the early age at which it is killed.

It is the star attraction of many of the restaurants of Arévalo, which roast the pig in the traditional way - in a wood-burning oven.
